R\u00e9aliser la p\u00e2te sucr\u00e9e, phraser, mettre en froid.
\nFaire la ganache au chocolat blanc, r\u00e9server au froid.
\nR\u00e9aliser ensuite l’insert au fruit de la passion, le couler dans les moules ad\u00e9quate, mettre au cong\u00e9lateur.
\nAbaisser la p\u00e2te sucr\u00e9e, la d\u00e9tailler et la mettre a cuire a 180\u00b0 pendant 10-15 minutes.
\nFaire la mousse a la noix de coco, dresser dans les moules samurai 110 et cloud 1600 en intercalent respectivement une couche de mousse, puis l’insert au fruit de la passion, une deuxi\u00e8me couche de mousse coco et pour finir la ganache avec le disque de p\u00e2te sucr\u00e9e. Bloquer le tout en surg\u00e9lateur.
\nR\u00e9aliser les pr\u00e9parations pour le gla\u00e7age miroir et pour le gla\u00e7age velours.
\nGlacer et d\u00e9corer les entremets.

femme Sophie \u00e9galement boulang\u00e8re p\u00e2tissi\u00e8re de m\u00e9tier la boulangerie p\u00e2tisserie de sa famille cr\u00e9\u00e9 par son grand p\u00e8re en mai 1949 aujourd'hui nous nous effor\u00e7ons de mener au mieux cet h\u00e9ritage qui aujourd'hui est renforc\u00e9 par nos 2 fils \u00e9galement dans ce beau m\u00e9tier
